Peanut Butter Chocolate Chip Granola Bars
Ingredients
- 2/3 cup butter
- 1 cup brown sugar
- 1/2 cup light corn syrup
- 1/4 cup granulated sugar
- 4 cups rolled oats
- 3/4 cup chocolate chips
- 2/3 cup peanut butter
Instructions
- Preheat the oven to 350°F (175°C).In a large bowl, cream together the butter, sugar and brown sugar. Stir in the corn syrup, vanilla, and oats until well combined.Spread the mixture evenly into a well-greased 9x13-inch baking pan.Bake in the preheated oven for 15–20 minutes. The bars will seem very soft to the touch, but will firm up as they cool.Once out of the oven, let cool completely.For the topping, melt the chocolate chips and peanut butter over low heat. Stir until smooth.Pour the melted topping over the cooled oatmeal mixture, spreading it evenly.Let the bars set in the refrigerator until firm, then cut into bars.
