Peanut Butter Chocolate Chip Granola Bars

Peanut butter, oats, and chocolate chips come together in these chewy granola bars. A tasty, homemade snack that’s easy to make and sure to please everyone.

Ingredients

  • 2/3 cup butter
  • 1 cup brown sugar
  • 1/2 cup light corn syrup
  • 1/4 cup granulated sugar
  • 4 cups rolled oats
  • 3/4 cup chocolate chips
  • 2/3 cup peanut butter

Instructions

  • Preheat the oven to 350°F (175°C).
    In a large bowl, cream together the butter, sugar and brown sugar. Stir in the corn syrup, vanilla, and oats until well combined.
    Spread the mixture evenly into a well-greased 9x13-inch baking pan.
    Bake in the preheated oven for 15–20 minutes. The bars will seem very soft to the touch, but will firm up as they cool.
    Once out of the oven, let cool completely.
    For the topping, melt the chocolate chips and peanut butter over low heat. Stir until smooth.
    Pour the melted topping over the cooled oatmeal mixture, spreading it evenly.
    Let the bars set in the refrigerator until firm, then cut into bars.

Notes

  • Store these granola bars in the refrigerator to keep them firm.
    If you like your granola bars a little sweeter, you can add more brown sugar or drizzle extra honey over the top before serving.
