Mint Brownies
These Mint Brownies are a delicious treat that combines rich chocolatey goodness with a refreshing peppermint twist. Topped with a creamy mint icing, they are perfect for anyone who loves the combination of chocolate and mint.

Mint Brownies
Ingredients
Brownie
- 4 ounces unsweetened chocolate
- 1 cup butter softened
- 4 large eggs
- 2 cups granulated sugar
- 1/2 teaspoon peppermint extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup chopped nuts optional
Frosting
- 1/4 cup butter softened
- 2 cups powdered sugar
- 1/2 teaspoon peppermint extract
- 2 Tablespoons milk
Instructions
- Melt the Butter and Chocolate:In a saucepan over low heat, melt the butter and unsweetened chocolate, stirring frequently to prevent burning. Once melted, remove from heat and let it cool slightly.Prepare the Brownie Batter:In a large mixing bowl, beat the eggs until light and fluffy.Stir in the melted butter and chocolate mixture and peppermint extract until fully combined.In a separate bowl, whisk together the flour, salt, and chopped pecans (if using). Gradually fold the dry ingredients into the wet mixture, stirring just until incorporated.Bake the Brownies:Pour the brownie batter into a greased and floured 9x13-inch baking pan. Spread the batter evenly.Bake in a preheated oven at 350°F (175°C) for 25–30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.Prepare the Mint Icing:In a separate bowl, combine the butter, powdered sugar, and peppermint extract. Gradually add the canned milk (or any milk you prefer) and mix until smooth and spreadable.Frost the Brownies:Once the brownies have cooled, spread the mint icing evenly over the top.
Notes
- Texture Variations: You can add chopped nuts to the brownie base for extra texture, or skip them for a smooth, fudgy result.
- Double the Recipe: If you prefer a thicker layer of brownies, you can 1 1/2 times the recipe and use a jelly roll pan. Make sure to double the icing to cover the larger surface.
- Storage: Store these brownies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They can also be frozen for up to 3 months.
- Make It Extra Minty: For an even stronger mint flavor, add a few extra drops of peppermint extract to the icing or drizzle melted chocolate over the top.
