Hearty Oven Baked Beef Stew

A savory and hearty beef stew made with simple ingredients like beef stew meat, potatoes, and carrots, baked to perfection with a creamy broth. This comforting dish is the ideal dinner for cooler weather.

Ingredients

  • 1 (1 oz.) package dry beefy onion soup mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1 pound beef stew meat cut into bite size pieces
  • 3 medium potatoes peeled and chopped
  • 1 small onion diced
  • 2 carrots peeled and chopped
  • 1 (10.5 oz.) can cream of celery soup
  • 1/4 cup ketchup

Instructions

  • Preheat oven to 325°F (165°C).
    In a large resealable bag or mixing bowl, combine the dry beefy onion soup mix, salt, paprika, and beef stew meat. Shake or toss to coat the beef well.
    Prepare the vegetables: Arrange the peeled and chopped potatoes, diced carrots, and onions in a 1.5-quart baking dish.
    Layer the beef: Add the beef mixture over the vegetables in the baking dish.
    Mix the sauce: In a small bowl, combine the cream of celery soup and ketchup. Stir until well mixed, then pour the mixture evenly over the beef and vegetables.
    Cover and bake: Cover the baking dish with aluminum foil and bake for 2 hours at 325°F (165°C), or until the meat and vegetables are tender.
    Optional: Garnish: Garnish with fresh parsley if desired before serving. Serve with crusty bread or rolls.

Notes

  • Meat Choice: You can substitute the beef stew meat with chicken or pork if preferred. Adjust the cooking time if necessary.
  • Thickening: For a thicker stew, you can mash a portion of the potatoes once the stew is done baking, or add a slurry of cornstarch and water in the final 30 minutes of baking.
  • Slow Cooker Option: You can easily make this in the slow cooker. Simply follow the prep instructions and cook on low for 6-7 hours or high for 3-4 hours instead of baking.
