Chicken Salad Sandwiches

Tender rotisserie chicken mixed with mayonnaise, Italian seasoning, celery, apple, grapes, and cream cheese makes a creamy, flavorful chicken salad. Served on a buttery croissant, this sandwich is the perfect combination of savory, sweet, and crunchy.

Ingredients

  • 2 cups rotisserie chicken shredded (or more, as desired)
  • 1/2 cup mayonnaise
  • 2 Tablespoon Good Seasoning Italian Dressing Mix
  • 1/2 cup celery diced
  • 1/2 apple diced
  • 1/2 cup grapes quartered
  • 1/2 cup cream cheese softened
  • 4 croissant rolls

Instructions

  • Prepare the chicken salad:
In a large mixing bowl, combine the shredded rotisserie chicken, mayonnaise, Italian dressing mix, diced celery, diced apple, sliced grapes, and softened cream cheese.
Stir all ingredients together until fully combined. The cream cheese will help bind the mixture and make it creamy, while the Italian seasoning adds a zesty kick.
    Assemble the croissant:
Slice each croissant in half, lengthwise, but don’t cut all the way through, leaving a hinge.
Spoon the prepared chicken salad generously onto the bottom half of each croissant.
    Serve:
Serve immediately for the best texture and flavor. These sandwiches are perfect on their own or with a side of fresh salad or pasta.

Notes

  • Adjusting Chicken Amount: Feel free to increase the chicken to 2 1/2 to 3 cups if you prefer a more chicken-forward salad. This will give the salad a meatier texture while still being balanced with the other ingredients.
  • Flavor Customization: If you like a more intense flavor, you can add extra Italian seasoning or a dash of garlic powder to enhance the seasoning. A squeeze of fresh lemon juice will also brighten up the flavor!
  • Make it Creamier: For a richer, creamier texture, increase the mayonnaise to 3/4 cup or add a spoonful of Greek yogurt to balance the creaminess with a tangy twist.
  • Storage: The chicken salad can be made up to 2 days in advance and stored in an airtight container in the refrigerator. The flavors will meld together, and it will be even better the next day.
  • Toppings & Add-ins: For added crunch, you can mix in chopped nuts like almonds or walnuts. If you like a little extra sweetness, consider adding dried cranberries or swapping out the apple for grapes.
  • Serving Options: This chicken salad works great as a sandwich on croissants, stuffed in pita pockets, or served over a bed of greens for a lighter version. It's also perfect as a dip with crackers or veggies!
