This pumpkin spice cake is full of rich flavor with warm spices like cinnamon, nutmeg, and ginger. The frosting is a smooth blend of cream cheese and honey, creating a perfect balance of sweetness to complement the cake.

Ingredients

  • 1 cup butter melted
  • 3 cups granulated sugar
  • 2 (15 oz) cans pumpkin puree
  • 4 large eggs
  • 2 Tablespoon pumpkin spice (or 3 t. cinnamon 1 1/2 t. ginger, 1 t. nutmeg, and 1/3 t. allspice and cloves)
  • 1 teaspoon salt
  • 4 teaspoon baking soda
  • 5 cups all-purpose flour

For the Frosting

  • 1 cup butter softened
  • 8 ounce cream cheese softened
  • 1/2 cup honey
  • pinch of salt
  • 3-4 cups powdered sugar
  • ground cinnamon as desired

Instructions

  • Prepare the Oven and Pan:Preheat the oven to 350°F (175°C). Butter a 9x13-inch baking pan.
    Make the Cake Batter:In a medium bowl, whisk together flour, baking soda, salt, and pumpkin pie spice. In a separate large bowl, whisk together eggs, sugar, melted butter, and pumpkin puree until smooth. Slowly add the dry ingredients to the wet mixture, mixing gently until fully combined.
    Bake the Cake:Pour the batter into the prepared pan, smoothing the top. Bake for 50-55 minutes or until a toothpick inserted into the center of the cake comes out with just a few moist crumbs attached.
    Make the Frosting:While the cake is cooling, prepare the frosting by whipping together cream cheese and honey until smooth. Gradually add powdered sugar and salt and continue whipping until fluffy and smooth.
    Frost the Cake:Once the cake is completely cool, spread the frosting evenly over the top. Cut into squares and serve.
