Black Beans & Rice

A hearty and flavorful meal, Black Beans & Rice can be made with simple ingredients for a satisfying dish. Perfect with freshly cooked tortillas, or paired with a side of hamburger for added protein.

Black Beans & Rice

Black Beans & Rice is a savory dish made with black beans, taco seasoning, and the perfect blend of seasonings. Serve over cooked rice with cheese and sour cream, or enjoy with tortillas.

Ingredients

  • 1/2 pound dry black beans or 3 cans of black beans, drained
  • 1 (14oz) can crushed tomatoes
  • 2 beef bouillon cubes
  • 1 Tablespoon taco seasoning
  • 1/4 cup dry onion
  • 1 teaspoon vinegar
  • 1 teaspoon minced garlic
  • splash of Worcestershire

  • Rinse and soak the black beans. If using dry beans, simmer for at least 1/2 hour or cook all day on low in the crockpot.
    Add all ingredients into the slow-cooker. Stir well to combine.
    If using canned beans, skip the long simmer time. Just heat until everything is well combined and the flavors meld together.
    Serve over cooked rice and garnish with cheese, sour cream, and cilantro. You can also add a pound of hamburger for extra flavor.

Instructions Instant Pot

  • Rinse and soak the black beans (optional, but recommended for more tender beans).
    Set the Instant Pot to the sauté function, add a splash of oil, and sauté the onions and garlic for 3-4 minutes, until softened.
    Add the rest of the ingredients to the Instant Pot, including the black beans (soaked or canned), tomatoes, bouillon cubes, taco seasoning, vinegar, and Worcestershire sauce.
    Close the lid, set the Instant Pot to manual for 30 minutes on high pressure. Make sure the valve is sealed.
    After the cooking time is up, allow the Instant Pot to naturally release pressure for 10-15 minutes. Quick release any remaining pressure.
    Stir the beans and season to taste. Serve over rice and garnish with cheese, sour cream, and cilantro.

Notes

  • If you prefer a spicier kick, add more taco seasoning or a dash of hot sauce to taste.
  • For more protein, add cooked hamburger, or serve with grilled chicken.
  • Can also be made in the slow-cooker for a longer simmer time.
