Chunky Potato and Pepper Soup

Chunky Potato and Pepper Soup
Ingredients
- 2 cups cooked chicken or ham chopped
- 3 potatoes cubed
- 1 small red bell pepper diced
- 1 small yellow bell pepper diced
- 1 small green bell pepper diced
- 1 small onion diced
- 2 carrots diced
- 2 celery ribs diced
- 1/4 cup butter
- 2 cups chicken broth
- 1/4 cup all-purpose flour
- 1/4 teaspoon pepper
- 1/8 teaspoon cayenne pepper
- 3 cups milk
Instructions
- In a large pot, sauté all vegetables and meat until partially cooked. Add salt, pepper, and flour. Stir until flour cooks slightly.Slowly add milk, stirring constantly, until the soup becomes creamy and thickened.Reduce heat and simmer, stirring occasionally, until vegetables are soft and the soup is fully cooked.Serve hot and enjoy!
Notes
- If the soup is too thick, you can add a little more milk to achieve the desired consistency.
- For extra flavor, feel free to add some shredded cheese as a topping.
- This soup can also be made with leftover rotisserie chicken for a quicker meal.
