Cinnamon Sugar Soft Pretzels
Ingredients
- 2 cups warm milk
- 1 1/2 Tablespoons active dry yeast
- 1/4 cup brown sugar
- 1/4 cup butter melted
- 4 1/2 cups all-purpose flour more or less as needed
Baking soda bath
- 1/3 cup baking soda
- 3 cups warm water
Topping
- 1/2 cup granulated sugar
- 2 teaspoons ground cinnamon
- butter melted
Instructions
- Activate the Yeast:In a large bowl or the bowl of a stand mixer, combine the 2 cups warm milk with the 1 1/2 tablespoons active dry yeast. Stir and let it sit for about 5 minutes, or until the mixture becomes bubbly and frothy. This ensures the yeast is active.Make the Dough:Once the yeast is activated, mix in the 1/4 cup brown sugar, 1/4 cup melted butter, and 1 teaspoon salt. Add the flour, one cup at a time, mixing after each addition. Continue adding flour until a smooth dough forms (the dough will be slightly sticky). You may need more or less flour based on your environment.Knead the dough in the mixer for about 5 minutes on medium speed, or by hand for about 8-10 minutes, until the dough is smooth and elastic.First Rise:Cover the bowl with plastic wrap and let the dough rise for about 1 hour, or until it has doubled in size.Shape the Pretzels:Once the dough has risen, punch it down to release the air. Preheat your oven to 450°F (232°C).Line two baking sheets with parchment paper and set them aside.Divide the dough into 12 equal-sized pieces. Roll each piece into a long, skinny rope. Twist each rope into a traditional pretzel shape, ensuring the ends are sealed.Prepare the Baking Soda Bath:In a medium bowl, mix together the 1/3 cup baking soda and 3 cups warm water until the baking soda is dissolved.Dip each pretzel into the baking soda mixture and then place it on the prepared baking sheets. This step helps give the pretzels their signature chewy texture.Bake the Pretzels:Bake the pretzels in the preheated oven for 7-11 minutes, or until golden brown.Topping:While the pretzels bake, prepare the topping by mixing 1/2 cup granulated sugar and 2 teaspoons ground cinnamon in a shallow dish.Once the pretzels are baked, brush them with melted butter and then dip them into the cinnamon sugar mixture for that sweet and spicy coating.
