Pineapple Salad
This sweet and fluffy pineapple salad is a perfect side dish for any occasion. Made with pineapple, whipped cream, and a touch of cheese, it’s a refreshing and creamy treat that’s easy to prepare.

Pineapple Salad
Ingredients
- 1 envelope Knox gelatin
- 1/4 cup cold water
- 1 cup crushed pineapple drained (reserve juice)
- 1 cup cheddar cheese shredded
- 1 cup whipping cream whipped
- 3/4 cup granulated sugar
- 1/2 cup pineapple juice use reserved juice from crushed pineapple
Instructions
- Dissolve gelatin in water. In a saucepan, dissolve sugar in pineapple juice over low heat. Bring to a boil. Immediately add gelatin mixture, stirring constantly. Remove from heat and allow it to set partially in the refrigerator until it forms a soft set.Beat the mixture until fluffy.Stir in the crushed pineapple, cheddar cheese, and whipped cream. Mix until well combined.Refrigerate overnight for the best consistency. Garnish with grated cheese just before serving.May be used the same day, but it will be firmer if refrigerated overnight.
Notes
- This salad can be made a day ahead for the best consistency.
- For a slightly sweeter version, add more sugar to taste.
- If you prefer a firmer texture, refrigerate overnight for the best set.
