A creamy and light pineapple salad made with whipped cream, pineapple, and cheddar cheese. A simple and delicious dish that works well as a side or dessert.
Ingredients
1envelopeKnox gelatin
1/4cupcold water
1cupcrushed pineappledrained (reserve juice)
1cupcheddar cheeseshredded
1cupwhipping creamwhipped
3/4cupgranulated sugar
1/2cup pineapple juiceuse reserved juice from crushed pineapple
Instructions
Dissolve gelatin in water. In a saucepan, dissolve sugar in pineapple juice over low heat. Bring to a boil. Immediately add gelatin mixture, stirring constantly. Remove from heat and allow it to set partially in the refrigerator until it forms a soft set.Beat the mixture until fluffy.Stir in the crushed pineapple, cheddar cheese, and whipped cream. Mix until well combined.Refrigerate overnight for the best consistency. Garnish with grated cheese just before serving.May be used the same day, but it will be firmer if refrigerated overnight.
Notes
This salad can be made a day ahead for the best consistency.
For a slightly sweeter version, add more sugar to taste.
If you prefer a firmer texture, refrigerate overnight for the best set.
