Apple Raisin Muffins
These moist and flavorful muffins are perfect for breakfast or a snack. Loaded with fresh apples and raisins, they are complemented by a delicious oat topping. The added cinnamon gives them a warm, comforting flavor that pairs wonderfully with a cup of tea or coffee.

Apple Raisin Muffins
Ingredients
- 3/4 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 cups apples chopped fine
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup raisins optional
- 1/2 cup walnuts optional
- 3/4 teaspoon baking soda
- 2 cups all-purpose flour
- 1/2 cup water
Topping
- 1/2 cup oats
- 1/4 cup brown sugar
- 2 Tablespoons butter
Instructions
- Preheat the oven to 400°F (200°C). Line a muffin tin with paper liners or grease with cooking spray.In a large mixing bowl, combine the wet ingredients: vegetable oil, granulated sugar, eggs, chopped apples, and water.In a separate bowl, whisk together the dry ingredients: cinnamon, salt, raisins (optional), walnuts (optional), baking soda, and flour.Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Avoid overmixing.Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.In a small bowl, mix together the topping ingredients: oats, brown sugar, and butter. Sprinkle the oat topping evenly over the muffins.Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let the muffins cool for a few minutes before serving.
Notes
- For extra texture and flavor, you can add chopped nuts like walnuts or pecans to the batter.
- If you prefer a sweeter muffin, feel free to increase the sugar in the recipe by 1 tablespoon.
- The oat topping gives a nice crunch, but you can skip it if you prefer a plain muffin.
