Donut Muffins

These light and fluffy donut muffins are the perfect treat for breakfast or dessert. Coated with a sweet cinnamon-sugar topping, they’re irresistibly soft on the inside and slightly crunchy on the outside.

Quick and easy donut muffins with a sweet cinnamon-sugar topping. Perfect for a cozy breakfast or an afternoon snack.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 large egg
  • 1/2 cup milk
  • 1/2 cup butter melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
    Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground nutmeg.
    Add wet ingredients: Add the egg, milk, melted butter, and vanilla extract to the dry ingredients. Mix until just combined, being careful not to over-mix.
    Spoon into muffin tin: Fill each muffin cup about 2/3 full with the batter.
    Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
    Prepare topping: While the muffins are baking, mix the cinnamon and sugar in a small bowl.
    Coat muffins: When muffins are done, allow them to cool for 5 minutes. Then, while they are still warm, sprinkle or dip the tops in the cinnamon-sugar mixture.

Notes

  • Storage: Store leftover muffins in an airtight container at room temperature for up to 2 days.
  • Serving suggestions: Serve with a hot cup of coffee or tea for a perfect breakfast or snack. These are also great served with a drizzle of icing or a dollop of whipped cream for extra indulgence.
