Spudnuts

Spudnuts are a nostalgic, melt-in-your-mouth treat that combines the rich flavor of mashed potatoes with the soft, fluffy texture of a donut. Passed down through generations, these donuts have created lasting memories for many families. Spudnuts

These Spudnuts are made with mashed potatoes, giving them a uniquely soft texture that’s perfect for frying. A family favorite, this recipe creates donuts that are both light and rich, with a subtle flavor that everyone will love.

Ingredients

  • 1 cup vegetable shortening
  • 4 cups lukewarm milk
  • 2 Tablespoon active dry yeast
  • 1 cup granulated sugar
  • 5 large eggs beaten
  • 2 cups mashed potatoes
  • 1/2 teaspoon lemon extract
  • 10-12 cups all-purpose flour
  • 1 Tablespoon salt

Instructions

  • Scald the shortening and milk: In a saucepan, scald 1 cup shortening and 4 cups lukewarm milk until the shortening has melted.
    Prepare the batter: In a large bowl, combine the milk and shortening mixture with 1 cup sugar, 1 tablespoon salt, and enough flour to make a thin batter.
    Add eggs: Beat 5 eggs and add them to the batter, stirring to combine.
    Add yeast and flavorings: Add 2 tablespoons of yeast, 1/2 teaspoon lemon extract, and 2 cups of mashed potatoes to the batter. Mix until well combined.
    Form the dough: Gradually add 10-12 cups of flour to the mixture, stirring to form a soft dough. The dough should be smooth but slightly sticky.
    Let the dough rise: Cover the dough and let it rise twice, allowing it to double in size each time. This will take about 1-2 hours in a warm place.
    Shape the donuts: Once the dough has risen, punch it down and roll it out on a floured surface. Cut into donut shapes using a donut cutter or any round cutter you have available.
    Fry the donuts: Heat oil in a deep fryer or large pan and fry the donuts until golden brown on each side. Remove them from the oil and place on paper towels to drain.
    Optional glazing: You can glaze the donuts with a simple powdered sugar glaze or roll them in cinnamon sugar for extra sweetness.

Notes

  • Flour: Depending on the humidity and type of flour, you may need to adjust the flour amount. Add enough flour to form a soft dough that is easy to handle.
  • Storage: Spudnuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days. Reheat in the microwave or oven to restore their softness.
