Pumpkin Chocolate Chip Bread

Pumpkin Chocolate Chip Bread
Ingredients
- 1 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 3/4 teaspoon salt
- 2 large eggs
- 3/4 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 1/2 cup pumpkin puree
- 1/2 cup vegetable oil
- 1/4 cup orange juice can also use milk
- 2/3 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F and adjust the oven rack to the lower third position to prevent the top of the bread from browning too quickly. Spray a 9x5 loaf pan with non-stick spray and set it aside.In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, cinnamon, nutmeg, cloves, and salt until combined.In a separate bowl, whisk the eggs, granulated sugar, and brown sugar together until smooth. Stir in the pumpkin puree, vegetable oil, and orange juice.Pour the wet ingredients into the dry ingredients and mix gently using a rubber spatula or wooden spoon. The batter will be slightly lumpy—do not overmix.Gently fold in the chocolate chips.Pour the batter into the prepared loaf pan.Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean. Cover the loaf loosely with aluminum foil halfway through the baking time to prevent the top from getting too brown.Let the bread cool in the pan for 10 minutes before transferring it to a wire rack. Best eaten 12 hours later to enhance the flavors.
