Breakfast Casserole
This easy Breakfast Casserole is a hearty, savory dish made with crispy hash browns, eggs, cheese, and your choice of breakfast meat. It’s simple to prepare and perfect for weekends, holidays, or make-ahead mornings.

Ingredients
- 3 cups frozen cubed hash browns
- 1/3 cup butter melted
- 1 cup ham, sausage or bacon cooked and crumbled
- 1 cup cheddar cheese
- 1/4 cup onion diced
- 1/4 cup green bell pepper diced
- 2 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 425°F. Grease a 9×13-inch baking dish.Press the frozen hash browns evenly into the bottom and slightly up the sides of the dish.Drizzle the melted butter evenly over the hash browns.Bake for 25 minutes, until the potatoes begin to crisp.Remove from the oven and reduce oven temperature to 350°F.Sprinkle the cooked meat, shredded cheese, onion, and green pepper evenly over the potatoes.In a medium bowl, whisk together the eggs, milk, salt, and pepper.Pour the egg mixture evenly over the casserole.Bake for 30–35 minutes, or until the center is set and a toothpick inserted comes out clean.Let rest for 5–10 minutes before slicing and serving.
Notes
- Frozen hash browns do not need to be thawed.This version feeds a crowd and works well for holidays and brunch.Can be assembled the night before; cover and refrigerate, then bake in the morning.If baking from cold, add 5–10 extra minutes.
