- 3/4 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 pinch baking powder
- 3/4 cup water
- 1/2 cup vegetable shortening
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 package chocolate chips

- Preheat the oven to 350°F. Line a muffin pan with paper liners.In a mixing bowl, cream together the sugar and shortening until smooth. Add the egg and mix well.Stir in the flour, cocoa powder, baking soda, baking powder, and salt. Add the water and vanilla extract and mix just until combined.Fold in the chocolate chips.Using a large cookie scoop, divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.Allow muffins to cool slightly before serving.
Notes
- Do not overmix the batter. Stir just until combined to keep the muffins soft and tender.Muffins are done when a toothpick inserted in the center comes out clean or with a few moist crumbs.These muffins freeze well.
