Cooking at a lower temperature helps prevent burning while allowing the French toast to cook through.In a bowl, whisk together milk, pumpkin purée, eggs, vanilla, cinnamon, nutmeg, and ginger until smooth. Pour mixture into a shallow dish.Butter the griddle. Dip each slice of bread into the pumpkin mixture, coating both sides.Place bread on the griddle and cook until golden brown on both sides, flipping once.While the French toast cooks, prepare the syrup. In a saucepan over medium heat, melt butter and stir in sugar, heavy cream, and corn syrup.
