Line the bottom of a 9×13-inch dish with ice cream sandwiches, trimming as needed so they fit snugly.Spread the softened sorbet or ice cream evenly over the ice cream sandwich layer.In a mixing bowl, beat the heavy whipping cream, sour cream, and powdered sugar until smooth and slightly thickened.Spread the whipped mixture evenly over the sorbet layer.Top with raspberries, blackberries (or strawberries), and blueberries.Cover and freeze until ready to serve.Remove from the freezer about 10 minutes before serving. Cut into squares and serve.
