Instructions
Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it.In a large bowl, combine the whole wheat flour, all-purpose flour, baking soda, ground nutmeg, and salt.In another bowl, whisk the eggs, mashed bananas, applesauce, and honey until well combined.Add the wet ingredients to the dry ingredients and stir just until moistened. Avoid overmixing.Spoon the batter into the muffin cups, filling them about 2/3 full.Optional: Sprinkle with a small amount of sugar on top before baking.Bake for 15–18 minutes, or until a toothpick inserted into the center comes out clean.
