Prepare sucker molds and insert sticks before beginning, as hard candy sets quickly once cooked.In a heavy-bottomed saucepan, combine sugar and corn syrup. Cook over medium to medium-high heat, stirring constantly, until the mixture reaches 310°F using a candy thermometer.Remove from heat and immediately stir in flavoring, food coloring, and citric acid mixture (if using). Stir carefully — the candy will be extremely hot.Carefully pour the hot candy into prepared molds. Allow to cool completely until fully hardened, about 30 minutes.Remove suckers from molds and wrap individually to store.
