Ingredients
1cuplong grain white rice
2cupschicken broth
1/2teaspoonsalt
1/4teaspoonground cumin
2Tablespoonsfresh lime juice
1teaspoonlime zest
2tablespoonschopped cilantro
Instructions
Combine the rice, chicken broth, salt, and ground cumin in a large saucepan or skillet. Bring to a boil over medium-high heat. Cover with lid, then reduce heat to medium-low. Let simmer for 20 minutes. Remove from heat but keep the lid on. Let stand with lid on for 10 minutes. Remove lid and add in lime juice, zest, and chopped cilantro. Fluff with a fork and serve warm.
Rice Cooker Variation
Combine the rice, chicken broth, salt, and ground cumin in your rice cooker. Set the cooker to the "white rice" setting and cook until done (about 20 minutes depending on the rice cooker). Once the rice is finished cooking, let it sit for 5 minutes with the lid on. Fluff with a fork, then add in lime juice, lime zest, and chopped cilantro. Serve warm.
Notes
You can adjust the amount of lime juice to your taste. Add more for a tangier flavor, or reduce it if you prefer a subtler citrus note.
If you prefer a richer flavor, you can replace the chicken broth with vegetable broth or add a teaspoon of butter while cooking the rice.
