Preheat oven to 350°F.In a medium bowl, mix all ingredients except the crescent rolls until well combined.Unroll crescent dough and press seams together. Cut into 4 rectangles (do not separate into triangles).Place one scoop of chicken mixture in the center of each rectangle.Fold dough over filling and pinch edges to seal, forming a pocket.Place crescents seam-side down on a baking sheet.Bake for 20–30 minutes, or until golden brown.Serve warm with mashed potatoes and chicken gravy, if desired.
Notes
Rotisserie chicken works especially well in this recipe.Be sure to seal edges well to prevent filling from leaking.These reheat nicely for leftovers.
