Ingredients
6cupswater
1pkglong grain and wild rice mix
1envelopelipton chicken noodle soup mix
2-4 celery ribs
2-4carrots
1onion
2cupscooked chicken
2canscream of chicken soup
parsleyfor garnish
Instructions
In a large pot, combine the rice, seasonings, and water. Bring to a boil and let it simmer for 10 minutes.Add the celery, carrots, and onion. Continue simmering for another 10 minutes, stirring occasionally.Stir in the chicken soup and cooked chicken. Let it cook for an additional 8 minutes, or until the vegetables are tender.Garnish with fresh parsley and serve warm.
Notes
If you’d like a thicker consistency, you can add a cornstarch slurry (mix 1 tablespoon cornstarch with 2 tablespoons cold water) to the soup and stir well.
For added flavor, you can sauté the carrots and celery in butter before adding them to the soup.
The soup is even better the next day, so feel free to make it ahead of time.
You can use leftover rotisserie chicken for a quicker prep time.
