Chewy energy bars made with crispy rice cereal, oats, peanut butter, brown sugar, and light corn syrup. A quick and easy homemade snack that’s perfect for a mid-day energy boost.
Ingredients
2 1/2cupscrispy rice cereal
2cupsold fashioned oats
1/4cuptoasted wheat germ
1cuplight corn syrup
1cuppeanut butter
1/2cuppacked brown sugar
1teaspoonvanilla extract
Instructions
In a large bowl, combine the crispy rice cereal, oats, and wheat germ.In a small saucepan, combine the corn syrup, peanut butter, and brown sugar. Cook over medium heat, stirring occasionally, until the peanut butter has melted.Remove from the heat and stir in vanilla extract.Pour the peanut butter mixture over the cereal mixture and stir until well combined.Transfer the mixture into a greased 9-inch square pan and gently press the cereal mixture evenly into the pan.Allow to cool completely before cutting into bars. Makes about 1 ½ dozen.
Notes
These bars can be stored in an airtight container for up to a week.Feel free to add chocolate chips, dried fruit, or nuts for extra flavor and texture.For a lower sugar option, try substituting honey or maple syrup for the corn syrup.
