Instructions
Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.In a medium bowl, whisk together the flour, sugar, baking powder, salt, and the grated cheddar cheese.In a separate bowl, whisk the egg and milk together. Add the melted butter and cooked sausage (drained). Stir to combine.Gradually add the wet ingredients to the dry ingredients and mix gently until just combined. The batter will be thick, but make sure not to overmix.Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.Bake in the preheated oven for 18-22 minutes, or until the tops of the muffins are golden brown and a toothpick inserted into the center comes out clean.Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
