Preheat oven to 375°F.In a small bowl, whisk together the eggs, vegetable oil, and pumpkin until smooth.In a large bowl, combine the cake mix, cinnamon, nutmeg, and ground cloves.Pour the wet ingredients into the dry ingredients and stir until fully combined.Fold in the chocolate chips.Drop dough onto a prepared cookie sheet.Bake for 12 minutes, or until cookies are set.Allow cookies to cool on the baking sheet before serving.
Notes
Be sure to use plain canned pumpkin, not pumpkin pie filling.These cookies are meant to be soft and cake-like rather than crisp.Letting the cookies cool on the baking sheet helps them finish setting without drying out.Spice cake mix provides the strongest flavor, but carrot cake mix works well too.
