Bubblegum Cupcakes with Bubblegum Marshmallow Frosting

Bubblegum Cupcakes with Bubblegum Marshmallow Frosting

Soft, fluffy bubblegum cupcakes topped with a light bubblegum marshmallow frosting. A fun dessert option for parties, school treats, and kid-friendly celebrations.

Ingredients

  • 1 cup sour cream
  • 1/2 cup oil
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup water
  • 1/2 cup buttermilk
  • 1 box white cake mix
  • 1/2 teaspoon bubblegum candy flavoring (you can get this at Gygi or order on Amazon)

Bubblegum Marshmallow Frosting

  • 1 cup butter softened
  • 1 7oz. jar marshmallow cream
  • 2 cups powdered sugar
  • 1/4 teaspoon bubblegum flavoring
  • food coloring

Instructions

Cupcakes

  • Preheat oven to 350°F. Line 24 cupcake tins with liners and set aside.
    Place cake mix into a large mixing bowl. In a separate bowl, combine sour cream, oil, vanilla, eggs, water, buttermilk, and bubblegum flavoring.
    Gradually add wet ingredients to the cake mix while mixing until fully combined and smooth. Add food coloring if desired.
    Using a 2½-tablespoon scoop, fill each cupcake liner with one level scoop of batter to ensure even sizing.
    Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
    Allow cupcakes to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Frosting

  • In a large bowl, beat softened butter until smooth and creamy.
    Add marshmallow cream and mix until fully incorporated.
    Gradually add powdered sugar, mixing until light and fluffy.
    Mix in bubblegum flavoring and food coloring, if using.
    Frost cooled cupcakes using a piping bag or spatula.

Notes

  • Bubblegum flavoring can be found at specialty baking stores or ordered online.
    Food coloring is optional but adds a fun visual element for parties.
    For a shortcut, the cupcakes can be made using a plain white cake mix with bubblegum flavoring added, as noted above.
    Store frosted cupcakes in the refrigerator and bring to room temperature before serving for best texture.
