Applesauce Oatmeal Muffins

These muffins combine the fiber of oats and the natural sweetness of applesauce, making them a deliciously wholesome breakfast or snack. Fluffy yet hearty, these muffins are lightly spiced with cinnamon for an extra flavor kick.

Ingredients

  • 1 1/2 cups oats
  • 1 1/4 cup all-purpose flour
  • 3/4 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 cup applesauce
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 3 Tablespoons vegetable oil
  • 1 egg white

Instructions

  • Preheat the oven to 400°F. Line muffin tins with paper liners.
    In a large bowl, combine the oats, flour, cinnamon, baking powder, and baking soda.
    In another bowl, whisk together the applesauce, milk, brown sugar, vegetable oil, and egg white.
    Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
    Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
    Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.

Notes

  • If you'd like a sweeter muffin, feel free to add an extra tablespoon of sugar or drizzle with honey before serving.
  • You can add chopped walnuts or raisins to this recipe to enhance the texture and flavor. Simply fold them in with the wet ingredients before combining with the dry ingredients.
  • These muffins are best eaten fresh, but they can be stored in an airtight container at room temperature for up to 3 days.
