Cinnamon Muffins
These warm, fluffy cinnamon muffins are perfect for breakfast or a snack. With a light, sweet crumb and a delicious cinnamon-sugar topping, they’re simple to make and loved by all.
Cinnamon Muffins
Ingredients
- 1/3 cup vegetable shortening
- 1/2 cup granulated sugar
- 1 large egg
- 1 1/2 cup all-purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/2 cup milk
Topping
- 1/2 cup granulated sugar
- 1 1/2 teaspoon ground cinnamon
- 3 Tablespoon butter
Instructions
- Preheat the oven to 350°F (175°C). Grease or line muffin cups with paper liners.Cream the shortening and sugar in a large bowl until smooth and fluffy. Add the egg and beat well.Mix dry ingredients: In a separate bowl, whisk together flour, baking powder, salt, and nutmeg.Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the milk, until fully combined.Prepare the topping: In a small bowl, combine the butter, sugar and cinnamon for the topping.Spoon the batter into the muffin cups, filling them about halfway.Top each muffin with a generous amount of the cinnamon-sugar mixture.Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
