A soft, fluffy muffin with a cinnamon-sugar topping, perfect for breakfast or an afternoon snack. Simple ingredients come together for a deliciously warm treat.

Ingredients

  • 1/3 cup vegetable shortening
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 1/2 cup all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup milk

Topping

  • 1/2 cup granulated sugar
  • 1 1/2 teaspoon ground cinnamon
  • 3 Tablespoon butter

Instructions

  • Preheat the oven to 350°F (175°C). Grease or line muffin cups with paper liners.
    Cream the shortening and sugar in a large bowl until smooth and fluffy. Add the egg and beat well.
    Mix dry ingredients: In a separate bowl, whisk together flour, baking powder, salt, and nutmeg.
    Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the milk, until fully combined.
    Prepare the topping: In a small bowl, combine the butter, sugar and cinnamon for the topping.
    Spoon the batter into the muffin cups, filling them about halfway.
    Top each muffin with a generous amount of the cinnamon-sugar mixture.
    Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.

  • Topping: Feel free to adjust the amount of cinnamon-sugar topping to your taste.
  • Storage: Store in an airtight container for up to 2-3 days.
