Perfect Pretzel Bites
Ingredients
- 4 cups strong bread flour
- 2 1/4 teaspoons fast acting yeast
- 2 Tablespoons granulated sugar
- 3 1/2 Tablespoons butter melted
- 1 1/4 cup water for boiling
- 3 Tablespoons baking soda for boiling
Instructions
- Mix Ingredients: In a large bowl, combine the bread flour and yeast. Gradually add the water and melted butter. Mix together until combined. Knead the dough for 5 to 6 minutes, either by hand or with a stand mixer fitted with a dough hook. The dough should be soft but not too sticky.Rise: Cover the dough and let it rise in a warm place for 1 to 1 1/2 hours, or until it has doubled in size.Shape the Bites: Once the dough has risen, punch it down to remove air bubbles. Divide the dough into small pieces, shaping them into bite-sized balls. Each ball should weigh around 5 grams.Boil: In a large saucepan, bring 1 1/4 cups of water to a boil. Add the baking soda to the water, then turn off the heat. Carefully drop the pretzel balls into the water and let them soak for about 20-30 seconds.Prepare for Baking: Remove the pretzel bites from the water and place them on a greased baking sheet. Brush the tops with an egg wash (1 beaten egg mixed with a tablespoon of water).Bake: Preheat your oven to 350°F (175°C). Bake the pretzel bites for 12-15 minutes or until golden brown. Allow them to cool slightly before serving.
Notes
- Rising Tip: The dough will rise best in a warm, draft-free place. If your kitchen is cool, you can place the dough in a slightly warmed oven or on top of the stove while cooking.
- Shaping: If you prefer smaller bites, feel free to divide the dough into more pieces. Just remember, smaller bites will bake a little faster.
- Boiling Tip: The baking soda bath is key for that classic pretzel crust. Make sure the water is at a rolling boil. This step gives the pretzels their chewy, golden texture.
